If sugar snap peas aren’t available, another crunchy vegetable like kohlrabi will also work very well. I have also used ready poached salmon, but I promise I’ll try to make them and share the recipe.     Apple pie 1. This recipe is based on @marcgrossman’s New York Cult Recipes book. The pastry is made in a food processor which makes it easier but also tricky at the same time. You see, to get a super flakey pastry dough, we need the butter to create pockets of fat that will expand when heated. Therefore the butter should stay in small bits- it shouldn’t be creamed into the flour.
