Super easy, super delicious and an excellent way to use up over ripe bananas from the freezer
Based on @nigellalawson’s recipe.
Ingredients
- 175grs plain flour
- 2 tspn baking powder
- ½ tspn baking soda
- ½ tspn salt
- 125grs unsalted butter,, melted (½cup)
- 150grs sugar, (¾ cup)
- 2 large eggs (or 3 medium)
- 4 small very ripe bananas, (or 3 medium)
- 1 tspn vanilla , extract
METHOD

Preheat oven to 170C
- 2)
Line a tin (25 x 15 x 7cm)
- 3)
Mix the dry ingredients and set aside.
- 4)
Beat the butter and sugar, then add the egg one by one and mix well after each addition.
- 5)
Add the vanilla.
- 6)
Mix in the banana.
- 7)
Fold in the flour mix in 3 additions.
- 8)
Optional: fold in at the end about 100grs soaked sultanas or 50grs chopped walnuts or 100grs chocolate chips or a mix of all!

Bake for 1 hour or until an inserted skewer comes out clean.
- 10)
If baked in a bundt pan, reduce baking time to 40min.
Notes
Place on a rack to cool.
