One of my all time favorite salads: shaved raw brussel sprouts with fresh herbs and bitter orange molasses. It is inspired by my beautiful and bountiful Lebanon with flavors of tangy molasses, earthy sea salt and deep olive oil.
Ingredients
- Bitter orange molasses
- 60ml olive oil
- 2 medium (90g) onions, finely chopped
- 3 garlic cloves, crushed2 tsp dijon mustard1½ tsp maple syrup60ml lemon juiceSalt (I used zaatar salt)500g
- brussels sprouts, very thinly sliced (use a mandoline, if possible)
- 20g dill, roughly chopped
- 20g parsley, finely chopped
- 30g fresh zaatar leaves, whole
- 100g walnuts, chopped
- 100g pomegranate seeds
METHOD
- 1)
Heat the oil in a small frying pan on a medium-high heat, then fry the onions for five minutes, stirring frequently until tender. Add the garlic, fry for another two minutes.

In a large bowl, whisk the mustard, maple syrup, lemon juice and the onion oil mixture with a teaspoon of salt, add the sliced sprouts, dill, zaatar and parsley, and mix well.
Notes
Transfer to a platter, sprinkles the walnuts and pomegranate seeds, pour over the molasses, and serve at room temperature.
