I had a dream, to relive the warm Beirut holidays of my childhood, warm chestnuts, raha and biscuit, laughs and giggles, with our loved ones. I had a dream, a pavlova as nostalgic as those evenings, Un Noël à Beyrouth. Mastic meringue, vanilla mascarpone whipped cream, a chestnut cream sweetened with Lebanese honey, slices of marrons glacés (candied chestnuts) and chewy mastic raha (loukoum) decorated with edible gold leaf.

When i finally managed to make it, I prepared it in 30min just before getting my kids from school. It’s that easy and super delicious. We all loved it at home! Serve with wedges of lemon and capers, if you like.

Continue ReadingEntertaining hack! When you create a cheeseboard using blocks of cheese, wrap the leftovers in plastic wrap then chill for up to a week or even freeze them (double wrapped in cling). When ready to serve, cut them into slices or bite sizes and voilà! What i also do with leftover hard cheeses such as comté or cheddar is grate them, place them in ziplock bags and freeze them to use in various recipes. Happy hosting and no to food waste!
