Continue ReadingI had a dream, to relive the warm Beirut holidays of my childhood, warm chestnuts, raha and biscuit, laughs and giggles, with our loved ones. I had a dream, a pavlova as nostalgic as those evenings, Un Noël à Beyrouth. Mastic meringue, vanilla mascarpone whipped cream, a chestnut cream sweetened with Lebanese honey, slices of marrons glacés (candied chestnuts) and chewy mastic raha (loukoum) decorated with edible gold leaf.

When i finally managed to make it, I prepared it in 30min just before getting my kids from school. It’s that easy and super delicious. We all loved it at home! Serve with wedges of lemon and capers, if you like.
