Miso tahini butternut squash with zaatar. This glaze is so easy to prepare. It has all the umami, earthy, sticky, delicious flavors that you need in your life!
Ingredients
- 1 butternut squash, peeled and thinly sliced
- 1/2 cup Tahini paste
- 2 tsp Miso paste, (i used barley miso)
- 3 tsp Soya sauce
- 2 tsp Sesame oil
- 1 tsp Ginger and garlic paste
- 1-2 tsbp Honey
- A large punch of dried zaatar, to sprinkle
- 2 Green onion, sliced, to garnish
- 1 tsp Toasted sesame seeds, to garnish
- Salt flakes to sprinkle, optional

Method
- 1)
In a medium bowl, whisk together the tahini, miso, soy, sesame oil, ginger and garlic paste and honey. You can taste and adjust the seasoning at this stage. Keep aside.
- 2)
Place the butternut squash slices on the lined trays, the brush them with the miso mix untel every bit is covered in this thick, sticky, delicious mixture.
- 3)
Sprinkle with zaatar and put in the oven.
Bake (roast) for 25-30min until nice and soft with golden edges. - 4)
Transfer to a serving dish then sprinkle with chopped spring onions and toasted sesame seeds. Sprinkle salt if desired.
Notes
Serves 6 as a generous side dish.
