  • Roast Beef with Gravy & Mash

Roast Beef with Gravy & Mash

    January 10, 2026pub

Roast beef with gravy & mash has to be the ultimate comfort dish. It reminds me of my childhood and my mom’s electric saw that she used whenever she made roast beef or “rosto”! She used to slice the meat super thinly and serve it with gravy, mashed potatoes, corn…I was so happy to manage to make it in the pressure cooker! You end up with soft and tender meat that is shreddable- you won’t need the electric saw after all!

    January 2, 2026pub

During the festive season, I love impressive desserts that are actually easy to make such as this flourless chocolate cake with almond and pears. It looks so decadent and so elegant although it is super easy to prepare. Firstly, just make sure to use Bartlett pears as they bake beautifully into a soft and jammy topping but retain their shape when baked. Secondly, add the meringue in thirds: 1/3 mixed in vigorously to loosen the batter and the remaining 1/3 then 1/3 gently folded in to retain lightness. Do not over mix to avoid deflating. I love using USA pears…

    Emirati Chami Cheese

    December 2, 2025pub

Emirati Chami Cheese (جبنة كامي) and blessed 54 years since the founding of the United Arab Emirates. My lovely friend Najla, whom I met through Instagram, shares my love for food. And in typical Emirati fashion, Najla is extremely generous and gifts me dates from her family’s farm often. This time around, she also sent me some Emirati ghee and a YouTube video with the instructions for making chami (Kami) cheese which is the tangy Emirati alternative to Italian ricotta, it is made from drinking yogurt and is often savored with dates and ghee.
