Ingredients
- 1 kg Black Angus beef rump @odeondubai
- Salt & pepper
- Bbq spices mix
- Thyme
- 2 tbsp extra virgin olive oil @darbhar_uae
- 1 onion (sliced)
- 4 garlic cloves
- 2 carrots (cubed small) + 1 celery stalk (chopped)
- 1 beef stock cube + 1 mushroom stock cube
- 2 cups water/broth
- 2 tbsp Worcestershire sauce
- 1 tsp thyme or rosemary
- paprika
- Soy sauce 1/4 cup apple cider vinegar
For the gravy
- 2 tbsp cornstarch + 2 tbsp water
For the mash
- 800 g potatoes, 2 tbsp butter, ½ cup milk/cream, salt
Method
- 1)
Season well with salt + pepper, bbq spices, paprika and thyme. Sauté in olive oil in the pressure cooker until browned on all sides. Remove.

Add onion, garlic, carrots, celery, more herbs. Sauté 3–4 min. Deglaze with vinegar.
Add stock cube, water/broth, Worcestershire and salt. Stir. - 3)
Return beef.
Cook 50 min on high pressure. - 4)
Remove beef.

Strain the cooking liquid for a smooth gravy, pressing half the veggies through the sieve to extract the maximum flavor.
Whisk in cornstarch slurry and simmer 3–5 min until thick. Season with soy sauce and or salt and pepper. - 6)
Shred the beef, pour over the gravy, serve with the carrots and cooking veggies, creamy mashed potatoes and extra gravy on the side.
