Healthy brownies and a thought.

Ingredients

  • 1 cup oats (or oat flour)
  • 1/4 cup cocoa powder
  • 1/2 cup peanut butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla

To dip

  • 2/3 cup dark chocolate chips (or chopped)
  • 1 tsp coconut oil
  • Sea salt flakes for sprinkling

Method

  • 1)

    In a small food processor, pulse the oats and the cocoa powder until powdered.

  • 2)

    In a medium bowl, whisk together the peanut butter, maple syrup and vanilla until smooth.

  • 3)

    Add the flour + cocoa mixture to the bowl. Knead together using your hand or a rubber spatula. Form into a thin square using 2 sheets of baking paper. Cover and chill until cold.

  • 4)

    Meanwhile, melt the chocolate with the coconut oil over a Bain Marie in a small bowl.

  • 5)

    When the brownie square is chilled, cut into small squares and carefully dip them in the melted chocolate. Use a fork to gently coat them in chocolate, lightly tapping on the side of the bowl to remove excess..

  • 6)

    Place on a tray lined with baking paper, wait for a few minutes and then sprinkle with salt flakes.
    Chill until set.

  • 7)

    Keep in the fridge
