Quick and Cheesy Tuna Jacket Potatoes

The ultimate comfort food: crispy, air fried jacket potatoes filled with a creamy, crunchy, cheesy, tuna mix with a delicious pesto and Greek yogurt base! No mayo in my jacket potatoes and only the finest, freshest ingredients from @spinneysuae

Ingredients

  • 4 medium potatoes
  • Olive oil (for drizzling)
  • 1 can tuna (in water or brine, drained)
  • ¾ cup full-fat Greek yogurt
  • 3 tbsp pesto
  • ½ tsp paprika
  • ½ tsp dried thyme
  • Salt and pepper, to taste
  • ⅓ cup shredded mozzarella (plus extra for topping)
  • 2 celery sticks, finely sliced
  • ½ small red onion, finely chopped
  • 3 tbsp pitted black olives, sliced

Method

  • 1)

    Scrub and clean the potatoes well. Drizzle lightly with olive oil, wrap in aluminum foil, and pierce with a fork.

  • 2)

    Place in an air fryer at 180°C for about 30 minutes, or until tender. Set aside to cool slightly.

  • 3)

    Meanwhile, prepare the filling: in a bowl, mix together the tuna, Greek yogurt, pesto, paprika, thyme, salt, pepper, mozzarella, celery, red onion, and black olives until well combined.

  • 4)

    Cut the cooked potatoes in half. Carefully scoop out the flesh, leaving the skins intact.

  • 5)

    Mash the scooped potato flesh and mix it into the tuna filling until evenly blended.

  • 6)

    Stuff the potato skins with the tuna mixture and place them on a baking tray lined with baking paper.

  • 7)

    Sprinkle extra mozzarella on top.

  • 8)

    Place under the grill (or in the oven on grill setting) until the cheese is golden and bubbling.

  • 9)

    Serve warm.
