Crunchy Homemade Granola with Pear and Chocolate

Ingredients

  • 2 Florelle pears, cored and grated
  • 2 tbsp water
  • 2 tbsp maple syrup SpinneysFOOD
  • 1 tsp cinnamon SpinneysFOOD
  • 1/2 tsp vanilla
  • 1/2 tsp ground ginger SpinneysFOOD
  • ¼ cup coconut oil
  • 2 cups rolled oats
  • 1/4 cup oat bran (optional)
  • 1/3 cup chopped almonds
  • 1/4 cup pumpkin seeds
  • 2 tbsp of raw sesame seeds SpinneysFOOD
  • 1/4 cup coconut flakes SpinneysFOOD
  • 85g chocolate, chopped SpinneysFOOD

Method

  • 1)

    Preheat the oven to 170C.

  • 2)

    Place the grated pears, water, maple syrup and spices in a small pot.

  • 3)

    Stir and bring to a simmer for about 10min over a low-medium heat, until soft and thickened.

  • 4)

    Add the coconut oil and mix.

  • 5)

    In a large bowl, mix the oats, bran, chopped nuts and seeds. Add the pear mixture and combined.

  • 6)

    Transfer the granola mixture into a baking pan with an edge. Spread it out to get an evenly packed layer.

  • 7)

    Cook in the preheated oven for 20 min, mix then return it to the oven for a further 20 minutes or until completely dry, golden and crisp.

  • 8)

    Allow the granola to cool completely before adding the chopped chocolate.
