Ingredients
- 2 Florelle pears, cored and grated
- 2 tbsp water
- 2 tbsp maple syrup SpinneysFOOD
- 1 tsp cinnamon SpinneysFOOD
- 1/2 tsp vanilla
- 1/2 tsp ground ginger SpinneysFOOD
- ¼ cup coconut oil
- 2 cups rolled oats
- 1/4 cup oat bran (optional)
- 1/3 cup chopped almonds
- 1/4 cup pumpkin seeds
- 2 tbsp of raw sesame seeds SpinneysFOOD
- 1/4 cup coconut flakes SpinneysFOOD
- 85g chocolate, chopped SpinneysFOOD
Method
- 1)
Preheat the oven to 170C.
- 2)
Place the grated pears, water, maple syrup and spices in a small pot.
- 3)
Stir and bring to a simmer for about 10min over a low-medium heat, until soft and thickened.
- 4)
Add the coconut oil and mix.
- 5)
In a large bowl, mix the oats, bran, chopped nuts and seeds. Add the pear mixture and combined.
- 6)
Transfer the granola mixture into a baking pan with an edge. Spread it out to get an evenly packed layer.
- 7)
Cook in the preheated oven for 20 min, mix then return it to the oven for a further 20 minutes or until completely dry, golden and crisp.
- 8)
Allow the granola to cool completely before adding the chopped chocolate.
