Sometimes love comes in the form of a home cooked meal. Specifically a sticky, sour and spicy salmon bowl with a zingy side salad. Without words. Just peaceful sounds.
Ingredients
- 200 g salmon, cubed
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp sriracha
- 1 garlic clove, grated
- 1 small piece ginger, grated
Salad
- 1/2 avocado, cubed
- 1 small cucumber, cubed
- 1 spring onion, sliced
- A few mint leaves
- A few coriander leaves
- Juice of 1 small lime
- 1 tsp soy sauce
Sriracha Yogurt Sauce
- 3 tbsp Greek yogurt
- 1–2 tsp sriracha
- 1 tsp sesame oil
- 1/2 tsp soy sauce
To serve
- Cooked brown rice mixed with cooked corn and steamed fine beans (a touch of soy sauce added)
- Nigella or sesame seeds (optional)
- Crunchy onions (optional)
Method

In a bowl, mix the salmon with soy sauce, honey, sriracha, grated garlic and ginger.

Place immediately in the air fryer and bake at 180°C for about 15 minutes.

In another bowl, combine the avocado, cucumber, spring onion, mint, coriander, lime juice and soy sauce. Mix gently.

For the sauce, whisk together the Greek yogurt, sriracha, sesame oil and soy sauce until smooth.

Serve the cooked salmon over the brown rice mix, add the salad on the side, drizzle with the yogurt sauce and finish with nigella or sesame seeds and crunchy onions if you wish.
