Ingredients
- 1 cup rolled oats
- 1 mashed banana
- 2 large eggs
- 1/2 cup milk of choice
- 1/4 cup almond powder
- 1/4 cup shredded coconut
- 3 tbsp honey
- 1/2 teaspoon vanilla extract
- 1 tbsp chia seeds (optional)
- 1 tbsp sunflower seeds (optional)
- 1/2 cup frozen blueberries
- Slivered almonds (for topping)

Method

Preheat your oven to 180°C

In a 20 x 28cm baking dish, mash the banana until smooth.

Add the rolled oats, eggs, milk, almond powder, coconut powder, honey, vanilla, chia seeds, and mixed sunflower seeds (if using). Mix well.

Top with the frozen blueberries.

Smooth the mixture in the baking dish and sprinkle slivered almonds on top.

Bake for 20 minutes or until the top is golden and the bake is set.

Let it cool slightly before serving.

Serve with a dollop of low-fat Greek yogurt and a drizzle of honey or extra bananas.
