What is your love language? Mine is food for sure- through cooking and baking for others and for doing for myself too. This super quick, 1 pot baked oats, feels like a treat although it is refined sugar free, gluten free and can be made dairy free. I absolutely love it on a slow weekend morning. Serve it warm with Greek yogurt and honey!

This super quick, 1 pot baked oats, feels like a treat although it is refined sugar free, gluten free and can be made dairy free. I absolutely love it on a slow weekend morning. Serve it warm with Greek yogurt and honey!

Ingredients

  • 1 cup rolled oats
  • 1 mashed banana
  • 2 large eggs
  • 1/2 cup milk of choice
  • 1/4 cup almond powder
  • 1/4 cup shredded coconut
  • 3 tbsp honey
  • 1/2 teaspoon vanilla extract
  • 1 tbsp chia seeds (optional)
  • 1 tbsp sunflower seeds (optional)
  • 1/2 cup frozen blueberries
  • Slivered almonds (for topping)

Method

  • 1)

    Preheat your oven to 180°C

  • 2)

    In a 20 x 28cm baking dish, mash the banana until smooth.

  • 3)

    Add the rolled oats, eggs, milk, almond powder, coconut powder, honey, vanilla, chia seeds, and mixed sunflower seeds (if using). Mix well.

  • 4)

    Top with the frozen blueberries.

  • 5)

    Smooth the mixture in the baking dish and sprinkle slivered almonds on top.

  • 6)

    Bake for 20 minutes or until the top is golden and the bake is set.

  • 7)

    Let it cool slightly before serving.

  • 8)

    Serve with a dollop of low-fat Greek yogurt and a drizzle of honey or extra bananas.
