Ingredients
- 4 puff pastry squares, each cut into 4 (16 mini squares)
- 100 g Manchego cheese, cubed
- 2–3 tablespoons quince jam
- Zaatar, to sprinkle
- 1 egg, whisked (for egg wash)
Method
- 1)
Preheat the oven to 190°C.
- 2)
Line a baking tray with non-stick baking paper.
- 3)
Arrange the mini puff pastry squares on the prepared tray. Brush each square with egg wash and sprinkle with zaatar.
- 4)
Place a small dollop of quince jam in the center of each square. Top the jam with a few small cubes of Montego cheese.
- 5)
Bake in the preheated oven for 15 minutes, or until the pastry is puffed and golden. Keep an eye on them to prevent burning.
- 6)
Remove from the oven and let cool slightly before serving. Serve with baby rocket or small leafy greens.
