Easy and delicious one pot butternut squash and sage orzo’tto- or the fake risotto. I dint know why i have 4-5 packs of orzo in my pantry. This recipe was exactly what i needed, warming and easy.
Ingredients
- 1 small butternut squash, peeled and chopped into cubes
- 2 small-medium shallots, sliced
- 3 garlic cloves, sliced
- 1 small bunch of sage
- A few sprigs of fresh thyme
- 1.5 cups of orzo
- 3 cups of stock
- Salt and pepper to season
- 200 g of Parmesan, grated
- Zest of one lemon
- 1/2 cup of cream
- 2 tablespoons of butter
- 2 tablespoons of olive oil
- 1 tsp of dried herbs (oregano, parsley, and garlic powder mix)
Method
- 1)
Melt the butter in a large pot. Add a few sage leaves and cook until crispy. Remove and set aside on kitchen paper to absorb the fat and keep them crispy.

In the same fragrant butter, add the chopped shallots and then the garlic. Cook until fragrant and softened.

Add the sage bunch and fresh thyme sprigs. Mix in the cubed and peeled butternut squash, herb mixture, olive oil, and sauté until softened. Season with salt and pepper.
- 4)
Add 3 cups of stock and bring to a boil before adding the orzo. Let it come to a simmer, reduce the heat, and cover. Add a bit of water if needed.
- 5)
Stir every now and then with a large metal spoon.
- 6)
Once the orzo is cooked, stir in the cream, Parmesan, and lemon zest. Taste and adjust seasoning.
- 7)
Serve the orzotto, garnishing with the crispy sage leaves.
