Easy and delicious yet impressive: caramelized onions tart with goat cheese. Super simple and so full of flavor.
Ingredients
- 200ml whipping cream (1 cup)
- 125g goats cheese without rind (or feta or bulgarian cheese)
- 75g grated gruyere or emmental
- 2 large eggs
- 1 roll of ready rolled short crust pastry
- Oregano
- Salt
- Caramelized onions (about 400gr) with 1-2 tbsp of pomegranate
- molasses or balsamic vinegar and a large pinch of oregano (recipe on the website)

Method

Preheat the oven to 180C

Line an 8” pie dish with removable bottom with the ready rolled short crust.
- 3)
Leave the sides overhanging, prick with a fork (to avoid bubbles), cover with a piece of baking paper and add ceramic beans (or dry pulses) to weigh the dough down.

Bake in the preheated oven for 10-15min.

Remove the beans, gently cut the edges using a small sharp knife and bake for another 5-10min until dry and a little bit colored.

Meanwhile, prepare the cream mixture: whisk the 2 eggs with the cream and season with oregano and salt. Leave aside.

When the crust is ready, spread the caramelized onions first, top with the crumbled goats cheese then sprinkle with the grated gruyère.

Pour the cream mixture on top- you can use almost all of it as it won’t puff up.
- 9)
Place the tart tin on a baking tray and carefully transfer to the oven.

Bake for 20-30min or until just set and golden all around.

Serve warm or at room temperature.

A super quick and easy tart that will not fail to impress! The sweetness of the onions work so incredibly well with the tang of goats cheese.
