Sound on! Super crunchy berries and goats cheese twists. An easy and impressive appetizer, made using puff pastry. I had cherries in the freezer. You can use blackberries too.
Ingredients
- 1 puff pastry ready rolled rectangular sheet, thawed
- 300g frozen berries (cherries or blackberries)
- 1 tsp honey
- 125g soft goats cheese log (no rind)
- 1 egg, whisked, for egg wash Granulated sugar, to sprinkle
- Dried thyme or oregano, to sprinkle
- Extra honey, to drizzle

Method

Preheat oven to 200°C

Cook your berries with the honey until mushy and thickened for about 10-15min.

Transfer into a bowl to cool.

Add the cheese and mix together.
- 5)
Unroll the pastry sheet and top with the cheese mixture. Spread evenly.

Fold the sheet to create a square.
- 7)
Cut into equal strips. Twist and roll.
- 8)
Place on a baking sheet lined with baking paper.
- 9)
Brush egg wash and sprinkle with sugar before baking for 15min or until puffed and golden.

Best eaten in the same day, drizzled with a bit of honey and sprinkled with dried zaatar.

NB: if you want to prepare ahead of time, you can reheat them in a hot oven for a few minutes.
