Peanut butter, oats and date snacks! (Energy balls)

These super moist and nutty bites are the easiest snack to prepare and have on standby for those recurrent fridge trips!

These super moist and nutty bites are the easiest snack to prepare and have on standby for those recurrent fridge trips!

Ingredients

  • 1 and 1/2 cups porridge oats
  • 1/2 cup pumpkin seeds
  • 1 cup pitted soft dates
  • 3-4 tbsp coconut oil
  • 3-4 tbsp smooth peanut butter
  • Shredded coconut to roll (optional)
  • Melted chocolate to dip (optional)

Method

  • 1)

    Put all the ingredients into the food processor, starting with 3 tbsp of each of the coconut oil and peanut butter.

  • 2)

    Keep processing until it comes together when pressed between your fingers.

  • 3)

    If it feels dry, or doesn’t come together like a dough, add a bit ,ore peanut butter then a bit more coconut oil.

  • 4)

    Roll into small balls of your preferred size.

  • 5)

    You can either roll them in melted chocolate then roll them into coconut flakes, or roll them into the coconut flakes without the chocolate.

  • 6)

    You can also simply leave leave as they are.
