These peanut butter cookies with chocolate chips are moist, crunchy on the edges, not overly sweet with a pinch of salt. You see, to get a super flakey pastry dough, we need the butter to create pockets of fat that will expand when heated. Therefore the butter should stay in small bits- it shouldn’t be creamed into the flour.
