This delicious and simple recipe is very adaptable. Use all flour, add apples and change the spices or make it with cocoa powder, orange zest and pears. It’s so easy to make, just using a whisk and some pantry ingredients.
INGREDIENTS
- -3 eggs
- -3/4 cup caster sugar
- -1/2 cup oil , coconut oil would be great if available
- 2 cups self raising flour , remove 2 tsp
- 2 tsp cocoa powder
- 1/2 cup orange juice
- 1/4 cup milk
- zest of 1 unwaxed orange
- 1 tsp vanilla essence or you can use the seeds of 1 pod
METHOD
To top:

Preheat oven to 180C.

Grease and flour pan

Rolled oats, brown sugar and cocoa powder.

3-4 pears, peeled, deseeded. Cut each into 4 and score them thinly lengthwise.

Start off by whisking by hand the eggs and the sugar until well combined.
- 6)
Next, add the sifted flour and cocoa and alternate with the juice and milk mixed with the oil. Fold gently with a spatula.

Add the zest at the end- don’t over mix.
- 8)
Pour in the cake pan and top with the pears in a circular way. Sprinkle some rolled oats, Demerara sugar and cinnamon before baking.
Notes
Bake at 180C for 30 min. Check with a skewer at 25 min. Inserted skewer should come out clean
