As promised, here is the recipe of my famous, utterly delicious, moreish fresh zaatar with walnuts, feta, olives and spring onions. Recipe is approximate, find it below. Fresh Zaatar Salad
INGREDIENTS
- 1 cup zaatar leaves, Fresh and green
- 1 cup lamb lettuce, (ba’leh)
- 1/4 cup spring onions, chopped
- 1/4 cup walnuts, chopped
- 1/4 cup black olives, pitted
- 1/4 cup cubes feta
- Velouté de balsamic (maille), OR pomegranate molasses
- Extra virgin olive oil

METHOD

Place the zaatar, lamb lettuce, green onions, walnuts, olives and feta cubes in a shallow serving plate.
Notes
Just before serving, dress it generously with extra virgin olive oil and velouté de balsamic (or pomegranate molasses).
Use salt sparingly (optional)
