This delicious caramel is so versatile and utterly delicious! Use it on its own, drizzled or mixed into your frostings. Yum!

This delicious caramel is so versatile and utterly delicious! Use it on its own, drizzled or mixed into your frostings. Yum!

Ingredients

For Salted Caramel

  • 1 cup (200 g) Sugar
  • 1/2 cup (120 ml) of whipping cream, warmed (more for thinner caramel)
  • ¼ tsp sea salt
  • 2 tbsp (30 g) butter
  • ½ tsp (2.5 ml) vanilla

Method

  • 1)

    In a heavy based medium pot place the sugar and heat on medium high swirling the sugar until it turns a deep amber and is completely dissolved. This will take 7-10 mins.

  • 2)

    Stay next to the pot. It will burn very quickly if not careful and must be swirled in order to prevent burning.

  • 3)

    Once a deep amber caramel appears, turn off the fire and add 1\2 cup of the warmed cream.

  • 4)

    Allow for boiling to settle, and then whisk to combine.

  • 5)

    Be careful steam will be very hot. Add ¼ tsp salt, vanilla and 2 tbsp of butter.

  • 6)

    Whisk until smooth and transfer to a Pyrex pitcher to cool.

  • 7)

    PS: add more cream about 1/2 cup for a runnier caramel, this one sets quite firm to a total of 250ml.

Notes

Attention: don’t attempt to make caramel with kids or pets in the kitchen. The caramel sugar can be scalding hot.
