Crushed Cucumber Salad with Asian Inspired Dressing

What I love about this salad is that I always have the ingredients at home. Also, 2 extra steps in the preparation take it to another level: the crushing of the cucumbers (it allows the dressing to seep into and onto every side and crack of the cucumbers) AND the salting of the cucumbers (to release extra water and make them crunchier).
I have made it twice in the past week and the dressing keeps nicely in the jar in the fridge ready to satisfy any cucumber salad craving!

What I love about this salad is that I always have the ingredients at home. I have made it twice in the past week and the dressing keeps nicely in the jar in the fridge ready to satisfy any cucumber salad craving!

Ingredients

Enough for 2-3 as a side salad

  • 7-8 small Lebanese cucumbers
  • Salt

For the dressing

  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • toasted sesame seeds
  • 1/4 tsp chili flakes
  • 1 tsp oyster sauce (optional)
  • 1 garlic clove, grated
  • knob of ginger, grated

Extra toasted sesame seeds to sprinkle

Method

  • 1)

    Carefully smash the cucumbers, making sure to keep big and medium chunks.

  • 2)

    Important step for extra crunch: Sprinkle with salt and transfer into a sieve to drain the excess water.

  • 3)

    In a small jar with a fitted lid, mix all the dressing ingredients and shake until combine.

  • 4)

    Place the cucumbers in a serving bowl, drizzle with the dressing and mix.

  • 5)

    Sprinkle sesame seeds and enjoy.
