You can adapt it however you like and using the ingredients you have at hand. It is so delicious, moist, dense, chocolatey and soooo easy!

Ingredients

Made 1 loaf tin and 10 mini cupcakes

  • 1 cup oat flour
  • 1 tsp baking powder
  • 1 cup almond flour
  • 3/4 cup cocoa powder
  • 1 cup coconut sugar
  • 2 large eggs, room temp
  • 3/4 cup almond milk
  • 1/4 cup cooled coffee (or replace with milk)
  • 1/3 cup coconut oil
  • 1/4 cup mini dark chocolate chips

Method

  • 1)

    Preheat oven to 180°C

  • 2)

    In a large bowl, whisk the dry ingredients (except sugar and chocolate) until combined.

  • 3)

    In a medium bowl, whisk the sugar with eggs, milk, coffee and oil.

  • 4)

    Add to the bowl of dried ingredients and fold until mixed well.

  • 5)

    Add the chocolate and mix briefly.

  • 6)

    Transfer into the lined loaf pan.

  • 7)

    Bake for 30-35 minutes or until puffed and set.

  • 8)

    The middle should be set but with little crumbs sticking into an inserted tooth pick.

  • 9)

    Cool on a rack.
