2/3 This is the easiest way of creating a creamy Caesar salad dressing without the raw egg. Its creamy, tangy and absolutely delicious.
Ingredients
- 2 anchovy fillets
- 2 garlic cloves, crushed
- 2 tbsp Greek yogurt (or labneh)
- 1 tbsp Dijon mustard
- 3/4 extra virgin olive oil
- 1/4 cup lemon juice (I used a mix of lemon juice and apple vinegar)
- 1/2 tsp salt
- 1/2 tsp black pepper

Method
- 1)
In a medium bowl, start by smoothing the anchovies into a paste.
- 2)
Add the Greek yogurt, the mustard, the spices and the garlic.
- 3)
Mix well before you add in the oil and lemon juice.
- 4)
Whisk until creamy.
- 5)
Taste and adjust the seasoning.
