1/3 Since I saw these Ceasar salad wraps on @nocrumbsleft, I couldn’t stop thinking about them! I adapted a bit the recipe to simplify it even more by using Greek yogurt instead of the raw egg and omitting the pickled onions. But believe me, this is absolutely delicious!!

1/3 Since I saw these Ceasar salad wraps on @nocrumbsleft, I couldn’t stop thinking about them! I adapted a bit the recipe to simplify it even more by using Greek yogurt instead of the raw egg and omitting the pickled onions. But believe me, this is absolutely delicious!!
For 2 wraps

Ingredients

Croutons

  • 4-5 slices of sliced sourdough bread, cubed
  • Olive oil, to drizzle
  • 1/2 tsp salt
  • Oregano, to sprinkle

Dressing

  • 2 anchovy fillets
  • 2 garlic cloves, crushed
  • 2 tbsp Greek yogurt (or labneh)
  • 1 tbsp Dijon mustard
  • 3/4 extra virgin olive oil
  • 1/4 cup lemon juice (I used a mix of lemon juice and apple vinegar)
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Other ingredients

  • Roast chicken, about 2 chicken breast, separated into big chunks.
  • Parmesan, about 100g, cut into thin strips using a peeler or grated.

Method

for the croutons

  • 1)

    In a large bowl, toss the bread cubes with the salt, oregano and olive oil.

  • 2)

    Mix well.

  • 3)

    Bake at 160°C until golden and crispy, about 20min.

For the dressing

  • 1)

    In a medium bowl, start by smoothing the anchovies into a paste.

  • 2)

    Add the Greek yogurt, the mustard, the spices and the garlic.

  • 3)

    Mix well before you add in the oil and lemon juice. Whisk until creamy.

  • 4)

    Taste and adjust the seasoning.

assembling

  • 1)

    For each wrap, overlap 3 of the biggest lettuce leaves and fill them with the chicken, the Parmesan cheese, some croutons and some dressing.

  • 2)

    Carefully roll as tight as possible, then wrap in a parchment paper. Twist the edges to seal.

  • 3)

    Using a sharp serrated knife, cut in half and enjoy!

  • 4)

    Best made and enjoyed on the spot.

  • 5)

    Can be made in a more manageable manner by using baby gel lettuce leaves and filling them with the ingredients and having them as bites.
