This is the first recipe in my “Easy Entertaining” series. I will be sharing a selection of easy yet impressive dishes to make hosting a lot more fun- for you as much your guests!

Ingredients

  • 250g spelt flour (or plain flour)
  • 125g cold butter, cubed
  • Pinch of salt
  • 1 egg yolk
  • 3 tablespoons cold water
  • 60g caster sugar

Filling

  • 4 not too ripe bananas
  • 20g butter
  • 100g brown sugar
  • 2 tablespoons lemon juice
  • 3 tablespoons almond powder
  • 40g milk chocolate, for drizzling
  • A handful of toasted sliced almonds

Egg wash

  • 1 egg yolk
  • Demerara sugar

Method

  • 1)

    Pour the flour onto a work surface. Add the cold butter cubes and salt. Mix with your fingertips until it resembles breadcrumbs.

    Make a well in the center, add the egg yolk, water, and sugar.

  • 3)

    Mix all the ingredients and press with the palm of your hand to form a dough.

  • 4)

    Shape into a disk about 2-3 cm thick and wrap in plastic wrap.

    Refrigerate for at least 2 hours.

    Peel the bananas and cut them in half lengthwise. In a large skillet, melt the butter and place the banana halves, add the brown sugar and lemon juice.

    Cook for 6 minutes over very low heat. After 3 minutes, flip the bananas: they should be lightly caramelized.

    Reserve the cooking caramel.

  • 4)

    Preheat the oven to 180°C.

  • 5)

    Roll out the dough between 2 sheets of parchment paper. Sprinkle with almond powder leaving a 4 cm border.

  • 6)

    Arrange the bananas and drizzle with 2 tablespoons of cooking caramel.

  • 7)

    Fold the edges of the dough over the bananas. Slide the parchment paper with the tart onto a baking sheet.

  • 8)

    Beat the egg yolk, brush the edge of the tart with a pastry brush, and sprinkle with Demerara sugar.

  • 9)

    Bake for 30 minutes until golden.

  • 10)

    Melt the chocolate in a double boiler. When the tart comes out of the oven, sprinkle with some sliced almonds and decorate with melted chocolate.

    Enjoy warm or at room temperature with vanilla ice cream if desired.
