Easy Eid maamoul cake. If you’re like me, craving the smell and the flavor of homemade maamoul- make this cake instead. It’s sweet, buttery and nutty. Smells and tastes similarly to the flavors we love about maamoul. It’s made with almond flour so it’s naturally gluten free. You can serve it as squares or as slices. May this Eid bring blessings to you and your loved ones. Ingredients from @spinneysuae

Continue ReadingI just love meals that can be prepped well in advance, like this kafta and potatoes bake, with a tangy tahini sauce. The twist is the addition of cauliflower- as my friend @chefsallyjane does. It’s such a delicious way to have this dish a bit lighter. Make sure to have the kafta balls at the bottom of the dish so they soak up all the yummy juices.

Continue ReadingA beautiful dialogue of flavors and stories at Bib Gourmand awarded Jiwan. Chefs @julien_guilloret and @chef_sara.aqel brought together the soul of Dara in Amman and the heart of Qatari cuisine in a menu that felt thoughtful, generous, and deeply layered. Fresh and vibrant yet deceptively simple at first glance, each dish carried its own story and complexity, from the warmth of Jiwan harees and the depth of camel, to the delicacy of sea bass crudo in tabbouleh cream, the comforting lamb with dates and mint, and the nostalgia of Teta’s rice pudding swirled with salted caramel and caramelized nuts. A collaboration that delivered not…

Continue ReadingIt’s incredible how a few simple ingredients can come together into something so crunchy and juicy. Fresh Brussels sprouts from SpinneysFOOD are one of my favourite seasonal vegetables this time of year. They make the easiest salad, perfect for preparing ahead and serving at bigger gatherings. The finely sliced sprouts stay crisp, the lemony vinaigrette brightens everything, and the sweet chewy dates bring it all together. The topping of crispy pine nuts and cumin seeds brings the whole salad to life. Finish with plenty of finely grated pecorino Romano, added right before serving – the more the better. Made using @spinneysuae ingredients.
