Can a salad be a state of mind? This white beans salad IS my current state of mind: a salad, earthy, grounding, canned, yet fresh and herby and tangy. It’s exactly what i am, and i am exactly what i need.
INGREDIENTS
- 1 can of white beans, rinsed and drained
- 1 small red onion, finely chopped
- 1 pomegranate, peeled
- 1 handful of dill, finely chopped
- 1 handful of flat leaf parsley, finely chopped
DRESSINGS
- 3 tsp molasses
- 3 tsp lemon juice
- 6 tsp extra virgin olive oil
- 1 garlic clove, crushed
- Salt
- 1 A pinch of sugar, (optional)

METHOD
- 1)
Mix all the veggies together in a large bowl.
- 2)
In a small bowl, whisk the dressing ingredients until emulsified.
- 3)
Combine the dressing with the salad and mix well.
NOTES
Serve immediately or cover and serve within 2-3 hours.
