I kept seeing them on my feed an dnow i understand the hype! They are so delicious and guilt free! Add proteins powder for a great after workout snack.
Ingredients
- 15 to 20 small, soft dates
- 1/2 cup desiccated coconut
- 1/3 cup coconut cream
- 1/2 teaspoon vanilla extract (optional)
- 1 cup of dark chocolate, milk chocolate, or a mixture of both (good quality)

Method
- 1)
In a mixing bowl, combine the desiccated coconut and coconut cream. If you’re using vanilla extract, you can add it to this mixture. Stir until it forms a dough-like consistency. If the mixture is too dry, you can add a bit more coconut cream.

Carefully pit the dates by making a lengthwise slit on one side and removing the seed.
- 3)
Take each pitted date and stuff it with a small amount of the coconut mixture, ensuring it’s evenly filled. Close the date to encase the coconut mixture. Repeat this process for all the dates.

Place the coconut-stuffed dates in the fridge for about 15 to 20 minutes to firm up.
- 5)
Meanwhile melt the chocolate using a bain-marie or a microwave, stirring until smooth.
- 6)
Remove the stuffed dates from the fridge. Using a fork, dip each stuffed date into the melted chocolate, ensuring it’s evenly coated. Let any excess chocolate drip off, and then place the dates on a baking sheet lined with parchment paper.
- 7)
Optional: While the chocolate is still wet, you can sprinkle additional desiccated coconut on top of each chocolate-coated stuffed date for decoration.

Allow the chocolate to set by placing the stuffed dates in the fridge for at least 30 minutes.

Once the chocolate has hardened, your Coconut-Stuffed Dates are ready to enjoy!
Notes
NB: you can also add vanilla protein powder to the coconut mix.
