There is something ultra special and heartwarming: friends who share their secret recipes. Friends who would then and there give you the recipe of a dish you loved at their party. That is Hala. We were over at theirs for dinner and she had the most delicious dressing! I asked her and she immediately revealed her secret: add some ready made pesto to your dressing! Genius!

PS: as a rule of thumb, the oil should always be double the vinegar or even triple – so 1 part vinegar to 3 parts oil, depending on your preference.

Ingredients
- 1 small shallot, halved
- 1 garlic clove (optional)
- 2 tsp mild honey (optional)
- 1/3 cup apple cider vinegar
- 1 cup extra virgin olive oil
- 4 tbsp Dijon mustard
- 1/2 tsp black pepper powder
- 2 tsp salt
- 1-2 tsp ready made pesto (best quality)
Method

Blend everything in a food blender.

Transfer to a small glass bottle, cover and keep in the fridge for up to 1 week.
