These delicious vegan lemon cookies are also gluten-free as they are made using only almond flour. They are super easy to make using store cupboard ingredients! I added some Greek mastic powder to the cookies and made the icing with normal sugar although the cookies are refined sugar free!
INGREDIENTS
- 2 cups almond flour , (fine)
- ¼ tsp bicarbonate of soda
- ¼ tsp fine salt
- 3 tbsp coconut oil
- 3 tbsp maple syrup
- 1 Juice of lemon
- 1 Zest of lemon
- 1 tsp Vanilla Extract
- ¼ tsp Lemon extract (optional)
- ¼ tsp mastica powder (optional)
Lemon icing:
- ¾ cup icing sugar
- 1 tbsp lemon juice
- 1 Zest of lemon

METHOD
For the cookies:
- 1)
Preheat oven to 160C.
- 2)
Line a baking tray with baking paper.
- 3)
Mix the dry ingredients first, then add the coconut oil, maple syrup, lemon zest and lemon juice. Mix gently with a spatula.
- 4)
Scoop about 1.5tbsp balls and place on the tray.
- 5)
Flatten a bit with your fingers before baking for 14-16min, until edges are golden.
- 6)
Don’t over bake!
- 7)
Transfer to a wire rack to cool completely.
For the icing:
- 1)
Sift the icing sugar into a medium bowl then whisk in the lemon juice and zest.
- 2)
Once the cookies are completely cooled, top with the icing.
- 3)
Keep in the fridge to set and enjoy within a few days.
