Cake that looks like the most decadent cake ever! It is in fact so light and fresh, topped with vanilla yogurt and fruits. You can even make the flours at home!

Ingredients
- 2 eggs
- 1 cup greek yogurt
- 1/2 cup brown or coconut sugar
- 1 teaspoon vanilla extract
- 1/4 cup oil (coconut or other)
- 2 cups almond flour
- 1/2 cup oat flour (or use all almond flour)
- 2 tsp baking powder
Topping
- 1 cup vanilla
- Greek yogurt or ice cream or whipped cream
- 2 cups mixed berries

Method

Preheat oven to 180°C
- 2)
Grease a loaf pan with oil
- 3)
Whisk together eggs, yogurt, oil, sugar and vanilla until smooth
- 4)
In a separate bowl, whisk the almond flour and baking powder until smooth and no lumps are in the mix.
- 5)
Transfer to the baking pan and bake in preheated oven for 18-20 min or until cake is puffed, golden and toothpick comes out clean.
- 6)
Let the cake cool before inverting onto a cooling rack.
- 7)
Once completely cool, top with yogurt and fruits.
