Ingredients
- 1 roll ready-rolled puff pastry, thawed
- 250 g of ricotta cheese (or mild labneh/greek yogurt)
- 2 large eggs
- 2 tablespoons of sugar
- 4 tablespoons of almond powder
- 1 teaspoon of vanilla extract
- Two handfuls of fresh blueberries
- Some slivered almonds for decorating
- Icing sugar for sprinkling
- 1 egg yolk whisked with a touch of milk for egg wash

Method
- 1)
Preheat the oven to 180°C.
- 2)
Unroll the puff pastry dough on a baking sheet.
- 3)
Create a 2 cm border by scoring lightly around the edges of the pastry with a sharp knife.

Brush the edges of the pastry with the egg wash.
- 5)
Prick the center of the pastry with a fork to prevent it from puffing up too much.

Bake the pastry for 10 min until it is crispy and golden on top.

In a medium bowl, combine the ricotta cheese, sugar, eggs, almond powder, and vanilla extract. Mix until well combined and smooth.

Once the pastry is pre-baked, remove it from the oven.

Spoon the ricotta mixture into the center of the pastry, spreading it out evenly, but leaving the scored border uncovered.

Top with the fresh blueberries over the ricotta mixture.

Sprinkle with some slivered almonds.

Return the galette to the oven and bake for about 20 min, or until the pastry is puffed and golden, the almond mixture is set, and some of the blueberries have burst.

Remove the galette from the oven and allow it to cool slightly.

Dust with icing sugar.

Decorate with edible flowers if you like.
