Spiced Cauliflower and Garlic Labneh

Spiced cauliflower and garlic labneh open sandwich. My favorite thing to do is to create new recipes using leftovers. I had some streamed cauliflower florets and the end result was the most delicious, crunchy, spicy open sandwich! Make sure to use the best sourdough.

Spiced cauliflower and garlic labneh open sandwich. My favorite thing to do is to create new recipes using leftovers. I had some streamed cauliflower florets and the end result was the most delicious, crunchy, spicy open sandwich! Make sure to use the best sourdough.

Ingredients

  • 2 cups of steamed cauliflower florets
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 2 tsp salt
  • 1/2 oriental spices (optional)
  • 1/4 cup panko (optional) olive oil
  • 2 garlic cloves, crushed with a pinch of salt
  • 1/2 cup labneh or greek yogurt
  • 1/2 tsp dried oregano
  • Toasted sesame seeds, to sprinkle
  • Chili flakes, to sprinkle Pickles, chopped
  • 2 slices of sourdough bread

Method

  • 1)

    In a large bowl, mix the spices with the panko if using.

  • 2)

    Add the cauliflower, drizzle some olive oil and toss to mix.

  • 3)

    Transfer to a preheated oven at 180C or air fryer.

  • 4)

    Bake for 15min, tossing midway, until golden and crunchy.

  • 5)

    In a small bowl, mix the garlic, labneh and herbs.

  • 6)

    Place the bread on the serving plate, spread a generous layer of garlic labneh, top with a pile of crunchy cauliflowers. Add some sliced pickles. Sprinkle sesame seeds and chili flakes.
