Meghli is a pudding made with rice flour, sugar and lots of spices. It is served when babies are born, customarily decorated with shredded coconut and nuts These moist little madeleines are packed with flavors reminiscent of happy occasions and births.

Ingredients

Makes 15

  • 100 g unsalted butter, melted, plus more, softened, for brushing
  • ½ cup (65 g) almond flour
  • 3/4 cup plus 2 tbsp (135g) all-purpose flour
  • 3/4 tsp baking powder
  • 1/4 tsp fine salt, La Baleine
  • 2 tbsp (25 g) brown sugar
  • Finely grated zest of 1 orange
  • 1tsp orange blossom
  • 2 large eggs
  • 1/4 cup (80 g) clover honey, SpinneysFOOD, extra to brush
  • 1/4 tsp cardamom
  • 1/4 tsp caraway
  • 1 tsp cinnamon
  • 6 medjool dates chopped
  • sesame seeds, to sprinkle (optional)
  • chopped pistachios, to sprinkle (optional)
  • shredded coconut, to sprinkle (optional)

Method

  • 1)

    In a small saucepan, melt the butter over medium-high heat, then cook, swirling the pan, until the milk solids brown, about 5 min.

  • 2)

    In a medium bowl, whisk the almond flour with the flour, spices, baking powder, and salt.

  • 3)

    Add the chopped dates and combine them properly, using your fingertips to coat all the tiny bits of dates with flour.

  • 4)

    In a large bowl, rub the sugar with the orange zest. Whisk in the eggs, orange blossom and honey until light, 2min. Using a spatula, fold in the flour mixture, then the butter, scraping up any browned butter solids from the bottom of the pan. Cover the bowl with cling and chill until the batter is firm, at least 1 hour.

    Heat the oven to 200°C. Place the madeleine pan on a baking sheet and brush the moulds with butter.

  • 6)

    Sprinkle with sesame seeds, shredded coconut and ground pistachios. Spoon the firm batter into the molds.

  • 7)

    Transfer the baking sheet to the oven and bake, rotating the sheet halfway through, until the madeleines are puffed, the edges are golden and a toothpick comes out clean, about 10 min.

  • 8)

    Let cool in the pan for 2 min, brush them a bit of butter and honey, transfer to a rack to cool.
