Ingredients
- 1 cup of whipping cream 35% fat
- 300 g milk chocolate, chopped or chips, couverture or 42%

Method
- 1)
Bring the cream to a good simmer on medium fire.
- 2)
Place the chocolate in a small deep bowl.
- 3)
Pour the hot cream over the chocolate and leave it to rest for 2 minutes.
- 4)
Using a whisk, gently mix the cream and chocolate until velvety smooth.
- 5)
Transfer to a shallow bowl and cover with cling film touching the surface.
- 6)
Leave to chill at room temperature overnight or chill for an hour at room temperature then transfer to the fridge until firm.
