The easiest ratio you need to memorize: 1 cup of dry couscous to 1 and 1/4 cup boiling water. Add your favorite spices, some salt and leave to puff up within just a few minutes. And that’s it! Full recipe for the stew coming up asap.

Couscous- the grain. My quick version of this classical North African dish..
The easiest ratio you need to memorize: 1 cup of dry couscous to 1 and 1/4 cup boiling water. Add your favorite spices, some salt and leave to puff up within just a few minutes. And that's it! Full recipe for the stew coming up asap.
Ingredients
Ingredients for 6 people
- 2 cups dry couscous (make sure it’s a precooked type that doesn’t need steaming)
- 2.5 cups boiling water (or stock of choice)
- 1 tsp salt
- 1 tbsp couscous spices (paprika, cumin, piment d’espellette…)

Method
- 1)
Place the couscous in a small pot, add the spices and the salt and mix.
- 2)
Add the boiling water or stock and mix.
- 3)
Cover and leave for a few minutes until the water is fully absorbed.
- 4)
Gently fluff with a fork.
- 5)
You can also add a knob of butter or some oil if you like.
- 6)
Serve with a stew on the side.

PS: this clay pot is not usually used to make the stew and not the couscous grains- but i couldn’t resist!
