Slow Cooker Beef Brisket with BBQ Sauce

During the holy month of Ramadan, days are slow and energy is lowww! And while iftar meals are the highlight of the day, I try to be creative as to what to whip up for the family that will make them happy and won’t require hours and hours over the stove top. Ingredients

Brisket

  • 1.5kg enough for 5 adults

rub

  • 1 tbsp brown sugar
  • 2 tsp paprika powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 3/4 tsp cumin powder
  • 1 tsp mustard
  • 1 tsp salt
  • 1/2 tsp black pepper

BBQ Sauce:

  • 2 garlic cloves , minced
  • 1/2 cup apple cider vinegar
  • 1 1/2 cups ketchup
  • 1/2 cup brown sugar, packed
  • 2 tsp EACH black pepper, onion powder, mustard
  • 1 tsp cayenne pepper (adjust to taste re: spiciness)
  • 1 tbsp Worcestershire sauce

Method

  • 1)

    Mix the dry rub ingredients. Massage all over brisket. Leave for 30min if possible

  • 2)

    Mix BBQ Sauce ingredients in a slow cooker then add the brisket.

  • 3)

    Slow cook in slow cooker for 8 hours (1.5 kg ) to 10 hours (2 kg ).

  • 4)

    When soft and falling apart, transfer the marinade to a small pot and reduce gently over fire.

  • 5)

    Meanwhile, brush the top of the brisket with a hit of marinade, a d broil or grill in a very hot oven (or under the grill) for 5-10min until golden on top.

  • 6)

    Serve with coleslaw, pickles, in a bun.
