Shawarma salad with crispy rice and creamy tahini dressing. A delicious and super quick way to enjoy all the delicious shawarma flavors but in a salad format – although we did end up eating with pita bread! Yummmm!

Shawarma salad with crispy rice and creamy tahini dressing. A delicious and super quick way to enjoy all the delicious shawarma flavors but in a salad format - although we did end up eating with pita bread! Yummmm!

Ingredients

For 3-4 ppl CRISPY RICE

  • 1 cup cooked cold rice
  • 1 tbsp olive oil Herbs + salt to taste
  • Pinch of nutritional yeast (optional)

Marinade

  • 1 tsp BBQ rub
  • 1 tsp cumin + coriander
  • 1 tsp paprika
  • ½ tsp cinnamon
  • 2-3 tbsp olive oil
  • 1 tbsp sumac
  • 2–3 tbsp balsamic vinegar
  • ½ tsp salt
  • 1 tsp 7 spice blend
  • 1 sliced red onion
  • 1 cup of sliced cherry tomatoes

SALAD BASE

  • 1 head lettuce, chopped
  • 1 ripe tomato, sliced
  • 1 red onion, thinly sliced
  • ⅓ cup Lebanese style pickles, sliced
  • ¼ cup parsley, finely chopped

TAHINI-YOGURT DRESSING

  • 2 tbsp tahini
  • 3 tbsp Greek yogurt
  • Juice of 1 lemon
  • 2 garlic cloves, crushed
  • Salt to taste
  • Water to thin

Method

  • 1)

    Toss rice with olive oil, herbs, and salt. Air fry or pan-fry until golden and crispy.

  • 2)

    MARINATED MEAT

    500g beef fillet, cut into strips

  • 1)

    Mix all marinade ingredients. Coat the meat well and marinate for 30 minutes (or overnight).

  • 2)

    Bake for 10min at 180C with the onion and tomatoes until cooked and nicely browned.

  • 1)

    Whisk all ingredients until smooth and creamy. Add water a bit at a time until pourable.

TO ASSEMBLE

  • 1)

    In a large serving bowl, combine the salad base and crispy rice.

  • 2)

    Drizzle with the creamy dressing and toss gently.

  • 3)

    Top with the hot marinated meat.

  • 4)

    Mix just before serving for the best flavor.
