Rice Paper Halloum Parcels (gf) As always, I absolutely love working with Lebanese brands and that for many reasons. First of all, the flavors and the quality are in my opinion the best. Secondly, the connection and the feeling I get from eating and consuming products that are from my land. Al Akhdar dairy produces their delicious fresh yogurts and cheeses from the south of Lebanon to the Bekaa. They are available in the UAE @pickitt.ae. Having a bite of this halloum feels like being a bit closer to home.

Ingredients
- 1 block (about 200 g) of @alakhdar.dairy halloumi cheese, sliced and rinsed well
- 21 rice paper sheets
- 1 large egg
- ½ cup milk
- 1 tbsp za’atar (for sprinkling)
Method
- 1)
Slice the halloum into even pieces, rinse them well, and pat dry with a paper towel.
- 2)
In a shallow bowl, whisk together the egg and milk until well combined.
- 3)
For each parcel, dip 3 rice paper sheets, one by one, into the egg and milk mixture, ensuring they are covered but not too wet. Stack them on top of each other.
- 4)
Place a slice of halloum in the center of the stacked rice papers. Roll the rice papers tightly around the halloum, folding in the sides like a parcel. Repeat for the remaining halloum slices.
- 5)
Arrange the parcels on a baking sheet lined with parchment paper. Sprinkle each parcel with za’atar.
- 6)
NB: If the parcels seem difficult to handle or too firm, let them sit for a couple of minutes to soften slightly.
- 7)
In the oven: Preheat to 180°C and bake for 20 min or until golden.
- 8)
In the air fryer: Set to 170°C and cook for about 15 min until crispy and golden.
- 9)
If any cheese leaks, gently tuck it back into the parcel.
