Cheesy zaatar flatbread using my easy 3 ingredients dough. This is the easiest breakfast bread that you can prepare in a skillet pan, without yeast and without proving! It is so yummy as it is and can be filled with endless possibilities!
Ingredients
Makes about 8 flatbreads
- 11/3 cups flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup Greek yogurt
- 2 tbsp toasted sesame seeds
- Shredded mozzarella (or cheese of your choice)
- Mixture of zeit w zaatar

Method

In a large bowl, add all the ingredients and mix with a rubber spatula until combined.

Once mixed, use your hands to knead briefly in the bowl until it forms a smooth dough.
- 3)
You can cover and let it rest for 15-20 minutes but as it’s baking powder and not yeast, this step can be skipped.
- 4)
Divide into eight equal parts. Form into a ball. Lightly dust your work surface with flour. Using a rolling pin, flatten each ball into a disc before filling it with cheese and zaatar. Dip 1 side in some sesame and roll again until a disc is formed.

Heat a dry pan over medium-high heat. Cook the flatbreads in the hot skillet for about 30 seconds on each side or until it puffs. Keep flipping and cooking until it has nicely golden parts.
- 6)
Serve the flatbreads warm, filled with tomatoes, olives, herbs and fresh onion slices.
