I always have bags of frozen berries in my freezer. Their nutritional benefits as well as the practicality makes them my number one choice for quick, last minute desserts such as this pistachio muhallabia and berries coulis, sweetened only with honey.
Ingredients
- 500ml full fat milk
- 4 tbsp cornstarch
- 2-3 tbsp cream
- 1-2 tbsp pistachio cream
- A pinch of crushed mastic
- Orange blossom
- Emborg frozen berries
- 1-2 tbsp honey Pistachio, chopped, to decorate.
- Edible flowers, optional

Method
- 1)
Mix the pistachio paste, orange blossom and the cream in a small bowl and whisk until smooth. Keep aside.

Pour the milk in a small heavy based pot.
- 3)
Remove 4 tbsp and place in another small bowl.
- 4)
Add the cornstarch to the small bowl of cold milk and whisk until smooth.

Heat the milk in the pot until simmering. Take off the heat, add the milk-cornstarch mix and whisk.

Return to the heat, and keep stirring on medium until thickened.

Take off heat, add the pistachio-cream mix and the mastic, whisk until combined.

Pour into small pots and chill for at least 6 hours until firm.

Meanwhile, make the berries topping:

In a small pot, add 2 cups of mixed Emborg frozen berries. Add 1 tbsp of water, the honey, and cook slowly until thickened and reduced, about 10-15min.

Take off the heat, add the orange blossom, and chill until ready to use.

When the muhallabia is firm, top it with the chilled berries coulis and decorate with some chopped pistachios and edible flowers is desired.
