The most delicious peach nut crumble. Do I have to say anything more? Oh yes! Recipe below. Roasted peaches with nut crumble

Serves 10-12

Ingredients

For the crumble, use your fingertips to mix together

  • 1 cup of rolled oats
  • 1/2 cup of almond flour (or whole blanched almonds- I used my food processor to roughly grind them)
  • 1/2 cup of brown sugar
  • 1/2 cup of toasted and chopped hazelnuts (I used my food processor to roughly grind them)
  • 1/4 cup of unsweetened shredded coconut
  • 85 grs of unsalted butter, cut into cubes, at room temperature
  • 3 tbsp maple syrup
  • 1 tspn cinnamon
  • 1 tbsp sunflower seeds (optional)

Method

  • 1)

    Preheat oven to 190C

  • 2)

    -A handful of raw, flaked almonds to decorate -A pinch of salt (sell de guérande, fleur de sel or kosher salt)

  • 3)

    Mix well and put aside.

  • 4)

    In an oven proof dish, place cut side up, 6 ripe yellow peaches, halved and pits removed.

  • 5)

    Toss them with 2 tbsp unsalted melted butter, 1 tbsp brown sugar, 1 white sugar and a pinch of salt.
    Fill them with the crumble.

  • 6)

    Sprinkle with the flaked almonds and bake in the preheated oven for 30-40min until golden and the peaches are nicely roasted. (Depends on the size of the peaches)

  • 7)

    Enjoy with vanilla ice cream or custard!
