I always grabbed a couple for me or the kids to snack on later during the day and they always surprisingly remained soft and moist. So, of course, I asked them for the recipe and they were kind enough to share it! That cake is a great recipe for beginners, with most of the ingredients available in all of our pantries. INGREDIENTS
- 375 grs plain flour
- 400 grs sugar (or less if you want- some have tried with half the amount and it has worked)
- 30 grs cocoa powder
- 20 grs bicarbonate of soda
- 5 grs salt
- 2 large eggs
- 240 ml milk (or buttermilk)
- 240 ml oil
- 240 ml water (or coffee)
- 1 tsp vanilla essence
METHOD
- 1)
Preheated oven at 160C fan or 170C regular gas oven.
- 2)
Butter and flour your mould, I used an 8” pan.
- 3)
Baking time varies.
Place all the dry ingredients in a large mixing bowl and whisk until well combined. - 4)
Whisk the liquid ingredients in a separate bowl until well combined.
- 5)
Combine both mixtures using a wooden spoon or a rubber spatula. Mix until just combined and no pockets of flour remain.
- 6)
Bake in the preheated oven for about 40 minutes or until a skewer inserted in the middle comes out clean.
Notes
Wait for 5 minutes before inverting on a cooling rack to cool completely.
