Recipe! This juicy peach and blueberry crumble is fruity yet comforting with the addition of nuts to the topping. Peach and blueberry nut crumble. Preheat oven to 190C
Serves 10-12
Ingredients
For the crumble, use your fingertips to mix together:
- 1 cup rolled oats
- ½ cup brown sugar -1 cup of ground almonds (I used my food processor to finely grind them)
- ¼ cup unsweetened shredded coconut
- 85grs unsalted butter, cut into cubes, at room temperature -3 tbsp maple syrup
- 1 tspn cinnamon
- 1 tbsp sunflower seeds (optional)
- A handful raw, flaked almonds to decorate -A pinch of salt (sell de guérande, fleur de sel or kosher salt) Mix well and put aside.

METHOD
- 1)
In an oven proof dish, place cut side up, 6 ripe yellow peaches, halved and pits removed.
- 2)
Toss them with 2 tbsp unsalted melted butter, 1 tbsp brown sugar, 1 white sugar and a pinch of salt.
- 3)
Fill them with the crumble.
- 4)
Add the blueberries, about 3 small punnets, or a couple of handfuls.
- 5)
Sprinkle with the flaked almonds and bake in the preheated oven for 50min until golden and the peaches are nicely roasted.
Notes
Enjoy with vanilla ice cream or custard!!
