This Loacker lazy cake is a take on a childhood favorite! The delicate layers of wafers filled with creamy chocolate and hazelnut cream together with the crunchy toasted hazelnuts add a grown up touch of this classic dessert.
Ingredients
- 250grs unsalted butter, melted
- 3-4 packets of any flavored Loacker wafers, (ideally 650g)
- 395grs of sweet condensed milk
- 5 tbsp of cocoa powder, sifted
- 200g hazelnuts, roasted and roughly chopped

Method
- 1)
Cut the wafer biscuits into small squares. Crush about 150g of them.

That will give us 2 textures.
- 3)
Place in a large bowl the condensed milk, add the cocoa powder and whisk it well until combined.
- 4)
Add 1/2 the hazelnuts then fold in the wafer biscuits.
- 5)
Mix well using a rubber spatula on your hands.
- 6)
Make sure everything is properly combined and all the biscuits are coated in the chocolate mixture.
- 7)
Do it gently as we need texture and not a homogeneous dough.
- 8)
Cut squares of baking paper and line them with aluminium foil.
- 9)
Spread some chopped hazelnuts onto the square and create logs on top of the nuts.
- 10)
Roll logs and wrap them tightly.
- 11)
Keep in the freezer for a minimum of 3 hours before slicing and serving straight from the freezer.
