Ingredients

Marination

  • 1 tsp cinnamon
  • 1 tsp allspice
  • 1 g tsp black pepper
  • 1 tsp 7 spices
  • 1 tbsp dried zaatar leaves @thegoodthymes
  • 1 tbsp piment d’espelette
  • 1/2 tsp cumin
  • 1/2 tsp dried coriander
  • 1 tsp oriental spices @kanz.beitelbaraka
  • 1/2 1/2 cup yogurt
  • 1/2 cup Balsamic glaze (or pomegranate molasses)
  • 1/2 cup soy sauce
  • 8-10 garlic cloves

Method

  • 1)

    Prepare you lamb shoulder by shaving off excess fat.

  • 2)

    Next, make a few slits and insert the garlic cloves.

  • 3)

    Mix the marinade ingredients in a small bowl and apply carefully to the whole meat.

  • 4)

    Marinate for 3-5 hrs (up to overnight).

  • 5)

    When ready to roast, place in a baking tray, on a rack.

  • 6)

    In the tray, place 2 small potatoes, 2 small carrots, 1 whole head of garlic, split in half, 6 garlic cloves, chopped, 1 large onion, quartered and 3 bay leaves.

  • 7)

    Add 1/4 cup orange blossom and 1/4 cup rose water. You can add more to cover the bottom of the pan.

  • 8)

    Cover with foil and bake in preheated oven at 200C for 1h30.

  • 9)

    Remove the vegetables half way through and blend to make a gravy sauce. Thin with water to desired consistency.

  • 10)

    Then reduce temp to 150C and roast for another 2.5 hrs.

  • 11)

    Serve with rice.
