THE one cake recipe that you’ll need in your life! It is super easy to make using basic ingredients you probably have at home. The freshness of the lemon zest is delicious and the labneh will create a soft crumbed cake that everyone will love.
Ingredients
- ½ cup neutral oil (I use coconut)
- 3 large eggs, room temp
- 1 cup plain labneh (or Greek yogurt or plain laban yogurt)
- 1 tsp vanilla extract (I use a mix of vanilla extract @droetkerarabia and vanilla powder @vanilla.beans.store )
- zest from 1 lemon
- Juice of ½ lemon
- 1 cup sugar
- 1½ cups plain flour
- 2 tsp baking powder
- ½ tsp salt
Method

Preheat the oven to 180°C

Lightly grease a 9-inch round cake pan and line the bottom with baking paper.

In a large bowl, whisk together the oil, eggs, labneh, vanilla, lemon zest, lemon juice, and sugar until smooth and well combined.

Sprinkle in the flour, baking powder, and salt evenly over the mixture. Gently stir using a spatula until just combined — avoid overmixing.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 40 minutes, or until a toothpick inserted in the center comes out clean.

Let cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
