Ingredients
for 6 servings
- 1 cup rolled oats
- ½ cup almond flour
- ½ cup oat bran
- ¼ cup coconut oil (melted)
- ⅓ cup maple syrup
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- A pinch of salt
- 4-6 very ripe peaches, stones removed and roughly cut
- 2 cups frozen mixed berries
- 1 tbsp of corn starch (optional to thicken the fruit juices)
- ¼ cup chopped walnuts (optional) almond flakes to decorate

Preheat your oven to 175 °C

In a large bowl, mix the oats, almond flour, oat bran, cinnamon, and salt.

Add the melted coconut oil, maple syrup, cinnamon and vanilla. Stir until everything is evenly combined and moist (but still crumbly).

In your oven proof dish, toss the fruits with the cornstarch to thicken, if desired.

Sprinkle the crumble evenly over it.

Bake for about 35–40 minutes, until the fruit is bubbling and the topping is golden-brown and crisp. (If it browns too quickly, tent with foil.)

Let it cool for 10–15 minutes before serving—it helps the fruit juices settle.

Serve warm with a some Greek yogurt.

Store leftovers in the fridge (airtight) for up to 4–5 days. To re-crisp, reheat in the oven at 175 °C for 5–10 min.
