Korean-pancake inspired snacking bites. What are snacking bites? They’re little crunchy, tasty, crispy bites that you would want to snack on all day! The good things? They’re gluten free, vegan, made in the air fryer and can be prepared ahead of time for big crowds. Absolutely delicious! Serve them with the dipping sauce. YUM!
Ingredients
- 1 ½ cups shredded and squeezed carrots
- 1 ½ cups shredded and squeezed zucchini
- 4 green onions, chopped finely
- 1 tsp garlic powder
- 1 cup rice flour
- 1 cup cold water
- 1 tsp salt
- Sesame seeds (for sprinkling)
- Coconut oil (for brushing)
Dipping Sauce
- Mix the following ingredients in a small bowl. Keep refrigerated until ready to serve.
- 2 tbsp soy sauce
- 1 tbsp rice wine vinegar
- 2 tbsp water
- 2 tsp sesame oil
- 2 tsp maple syrup
- 1 garlic clove, minced
- 1/2 tsp sesame seeds
- 1 tsp chopped green onion
Method
- 1)
Mix shredded carrots, zucchini, and chopped green onions in a large bowl.

Whisk rice flour, cold water, salt, and garlic powder until smooth.

Mix the batter with the vegetables until well coated.
- 4)
Line a baking tray with nonstick baking paper then brush with coconut oil.
- 5)
Spread the vegetable mixture evenly and thinly on the tray.
- 6)
Brush the top with coconut oil and sprinkle with sesame seeds.
- 7)
Bake in an air fryer at 180°C for 25 min until top is golden.
- 8)
Cut into squares, then just before serving air fry a second time at 180°C for 10 to 20 min until crispy.
